Chocolate heart cookies (gluten Free)

These gluten-free, vegan cookies will sweeten and spice up your day! This recipe makes simple round cookies, but you can make elaborate heart shaped cookies by rolling out dough and using a cookie cutter.


makes 25 cookies

Dry:

1 cup rolled oats (certified gluten free), coarsely chopped in a food processor ( You may use quick cooking rolled oats.)

1 1/2 cup brown rice flour

2 tablespoons cocoa powder

1/2 teaspoon ground nutmeg

1 teaspoon ground cardamon

1 teaspoon ground cinnamon

1 teaspoon baking soda

1/8 teaspoon sea salt

Wet:

1/2 cup safflower or sunflower oil

1/2 cup maple syrup

1 teaspoon apple cider vinegar


  1. Preheat the oven to 350 F. Prepare baking sheet(s) by lining with parchment paper.

  2. Combine dry ingredients in a large mixing bowl.

  3. Stir together wet ingredients in a small bowl. Using a whisk, make sure the liquid emulsifies completely.

  4. Mix wet ingredients into dry.

  5. Oil a measuring spoon, scoop out about 1 heaping tablespoon of the dough, form balls about 1 inch diameter and press onto the baking sheet, making round cookies, leaving 1 inch space between cookies.

  6. Bake 7 - 10 minutes, until cookies are solid on the bottom, but still soft on top.

  7. Cool and serve.
